We got the green light from USDA for our smoked meat program yesterday! . . As a result, we're now able to add some salty, smoky value to the meats raised by us, and by other small farms! .... . It wouldn't have been possible to take this big step without grant funds from the Pennsylvania Department of Agriculture through the Small Meat Processors Grant Program in the 2019 PA Farm Bill. . . We're so proud and lucky to live in a state where small farms are valued, and that supporting the essential processing industry those farmers need is viewed as a priority here. . . We are looking for some seasonal, part time workers with lots of ambition and solid work ethic to join our merry crew of slaughterwomen (and slaughtermen ) in our very small scale, USDA inspected poultry processing plant! . . We need help Mondays, Thursdays, and Fridays from now until Thanksgiving or so, 8am until 4-5pm, doing the important work of turning birds into safe, wholesome food. . .... No prior experience is necessary, though prior experience in meat processing or commercial kitchens always helps. The crew slaughtered birds for the members of Clinton County Junior Livestock Club today. . . Clinton County is about 3.5 hours away as the crow flies (maybe more if the crow is humping a big ass trailer full of valuable poultry down US15S.) . .... Every bird's identity was maintained from start to finish so each member got their own bird back at the end, for eventual sale to the public at their county fair. . I was proud to offer a service that these folks need, and admire the dedication and significant sacrifice from the adult volunteers for the purpose of teaching kids about animal ag. . . We're crankin out some pretty nice birds lately guys. Decent weather, loads of green grass, sun- (and star-) light, and fresh air are all working together to create some damn fine chicken. Some folks equate an "organic" chicken (raised in confinement on boatloads of imported feed) or a "local" chicken (also raised in tighter confinement and trucked by the hundreds of thousands for hundreds of miles for slaughter en masse) to a true, honest-to-Betsy, pasture raised chicken l...ike ours.
