No scraps go unused. Most of times, the stuff pictured below will go unused and thrown away, but not here. We’ll make roasted veg stocks, pineapple vinegar, pork rinds and many more components to help elevate each dish. There’s about a 35 % food waste average in the USA. We must reduce that.
